Now, you can't talk about comfort food or mashed potatoes without talking about shepherd's pie.
If I was to eat my childhood in a non-creepy, non-cannibalistic way, it would be in the form of layered beef, corn, and mashed potatoes....and Kid's Cuisine.
So I'm bringing this throwback into post-Y2K territory, and into the realm of my favorite meal of the day: BREAKFAST.
I know that somewhere in the land of make-believe, there are such things as "morning exercisers". I think I would have a better chance becoming a unicorn than I do a morning exerciser, but for those who do: LISTEN UP.
This breakfast pie is not only a fleece blanket for your soul, but it's also the perfect post-workout meal.
Here is what's to love about this Breakfast Pie:
- It's has the perfect balance of carbohydrates, protein, fat, and electrolytes to help your muscles and body recover.
- Potatoes are a natural source of vitamin C, and contain more potassium per serving than bananas.*
- It can be made vegetarian-friendly or meat-based depending on your preference.

I actually used the Soy Chorizo from Trader Joe's for this (mainly so I could have Mr. Rob officially taste test), which was my first time trying it out. I was happily surprised by the amount of heat and flavor it had, but if you're not into any spice, you could substitute for a regular breakfast sausage or vegetarian substitute.
It's a great way to use up those leftover mashed potatoes (like these Instant Pot Mashed Potatoes I made earlier this week!), and could easily be prepped for the week ahead. I'm all up in those cook once, eat a bunch kinda recipes.

Vegetarian Breakfast Shepherd's Pie
- Total Time: 45 minutes
- Yield: 6 servings 1x
Description
A vegetarian breakfast pie filled with eggs, kale, and creamy mashed potatoes for a hearty and satisfying meal.
Ingredients
- 12 ounces soy chorizo (or breakfast sausage), casing removed
- 4 cups raw kale, chopped
- 6 eggs, whisked
- 1 clove garlic, minced
- 4 cups mashed potatoes
- salt and pepper, to taste
Instructions
- Preheat oven to 400 degrees.
- Heat an oven-safe skillet to medium heat.
- Add chorizo, and cook for five minutes.
- Add in chopped kale, and cook an additional 5 minutes, or until wilted.
- Move sausage mixture to one side of the pan.
- Pour in eggs to clear side of pan, and add garlic.
- Cook 4-5 minutes, or until eggs are cooked through.
- Stir entire mixture together, and removed from heat.
- Spread mashed potatoes over top of mixture to coat.
- Sprinkle with salt and pepper, and bake in prepared oven for 30 minutes.
- Let cool 5 minutes before serving.
Notes
- If you want this less spicy, you can use a ground turkey sausage (casing removed) or even tofu to keep vegetarian.
- Added ½ cup of shredded cheddar cheese before topping with potatoes is also super tasty.
- You can save some time by heating up the mashed potatoes beforehand, and serving without baking.
