    If you're not having cookies for breakfast, you're doing life wrong.

    Hold up. A dietitian telling you to eat some snickerdoodles first thing in the morning? Something's wrong. HORRIBLY wrong with this picture. Until I tell you said cookies are made with whole grain oats, dried fruits, seeds, and potatoes.

    That's right, straight up taters. It's time to bring the simple spud to a world it's hash browned little self has never dreamt of before. Cookies. For. Breakfast.

    As if giving you a reason to eat cookies for breakfast wasn't enough (greedy), these cuties are packed with the good stuff to fuel you after a workout (morning exercisers still baffle me), or even as a quick option to grab and go with. NO EXCUSES not to eat breakfast cookies. NONE.

    I actually prefer to freeze mine, and warm up a couple in the microwave for a few seconds. It's like having them fresh baked every time! It's really the simple things in life that get me.

    What to love about this Potato Breakfast Cookie Recipe:

    • They're allergen-free. Meaning they are safe and delicious for those who have common food allergies such as peanuts, tree nuts, dairy, or gluten.
    • They're made with potatoes, which are chock full of nutrients like carbohydrates and potassium to fuel your muscles and body after a workout or through a busy day. I recommend eating 2 cookies per serving to get the right balance of nutrition to refuel your body. I used some leftover mashed potatoes using this Instant Pot Mashed Potatoes recipe. I just didn't add any pepper or garlic to them.
    • They're vegan. The real reason I love to make vegan cookies is that I can eat all the dough beforehand without planning Russian Roulette with Salmonella.

    Description

    Having dessert for breakfast is possible with this delicious and easy potato breakfast cookie recipe made with whole grain oats, mashed potatoes, dried fruits, and seeds.


    Ingredients

    Units Scale
    • 1 cup prepared mashed potatoes
    • 2 tablespoons maple syrup
    • 2 teaspoons vanilla extract
    • ½ cup unsweetened applesauce
    • 1 tablespoon ground flax + 2 tablespoons water (flax egg)*
    • ¼ cup sunflower seed butter**
    • 1 ½ cups old-fashioned oats (certified gluten-free if needed)
    • 2 teaspoons cinnamon
    • ½ cup dried cranberries
    • ¼ cup sunflower seed kernels

    Instructions

    1. Preheat oven to 375 degrees, and line a baking sheet with a silicone baking mat, parchment paper, or aluminum foil. Set aside.
    2. In a large bowl, whisk together potatoes, maple syrup, vanilla, applesauce, flax egg, and sunflower seed butter.
    3. Add remaining ingredients, and stir to combine.
    4. Drop on prepared baking sheet by the spoonful, and flatten slightly with hand.
    5. Bake in preheated oven for 10-12 minutes, and let cool on baking sheet for 5 minutes before transferring to cooling rack.

    Notes

    • If not strict vegan, flax mixture can be replaced with regular egg.
    • Peanut butter or preferred nut/seed butter can be used per preference.
    • Cookies are best stored in the fridge for up to 3 days or up to 2 weeks in the freezer.
    • Recommend 2 cookies per serving.

      Cookies for breakfast and after a workout? Sign me up! And I've never thought to add mashed potatoes to cookie batter but we do with pumpkin so why not potatoes?
