    Hi friends!

    Sorry this post is coming in a little fashionably late, but I've been lucky enough to be wined and dined every night this week. You'd think it was my birthday or something.

    But alas, it is Recipe Redux time again, and there was no way I could miss this one!

    A Nutty Nut Day

    We had to take advantage of the fact that National Nut Day (October 22nd) falls on one of our ReDux monthly theme post days – so we can all go nuts! Share a healthy nut-filled recipe: Think whole nuts, chopped nuts, ground nuts, nut butter and/or nut flour. And Happy Nut Day!

    Sometimes you feel like a nut. Sometimes it is nationally recognized as a holiday. I'd like to meet the person who gets to decide whether or not pickled beets or red velvet cupcakes get to be recognized on the third Friday in June. Or actually be that person.

    So I'm no stranger to introducing peanut butter into every aspect of my life, where no man, child, or spoon is left behind.

    Okay, maybe I actually WOULD leave behind my non-existent hubby and infant for a spoonful of the nut stuff. Can you blame me?

    Especially if it was a chilly fall morning, where I was awoken by the sounds of coffee percolating, and the waft of peanut butter cinnamon rolls straight into my nostrils.

    Easy Peanut Butter Cinnamon Rolls

    Ingredients

    Units Scale
    • Rolls:
    • 2 ½ cups Bisquick mix (or GF variety)
    • ⅔ cup unsweetened almond milk
    • 2 tablespoons coconut oil
    • 1 tablespoon sugar
    • Filling:
    • ¼ cup natural peanut butter
    • 2 tablespoons brown sugar
    • 1 teaspoon cinnamon
    • Glaze:
    • ¼ cup natural peanut butter
    • 1 tablespoon honey
    • 2 tablespoons unsweetened almond milk

    Instructions

    1. Preheat oven to 375 degrees. Spray 9 x 9 inch pan with cooking spray. Set aside
    2. In a large bowl, combine bisquick and sugar. Cut in coconut oil until crumbly.
    3. Add milk, and mix until dough forms.
    4. Roll dough on a floured surface into a rectangle.
    5. Coat dough in peanut butter evenly.
    6. Sprinkle with cinnamon and sugar.
    7. Roll up tightly, and cut into 12 pieces.
    8. Place rolls cut side up into prepared pan.
    9. Bake in oven 20-25 minutes, or until golden brown. Let cool 5 minutes.
    10. Combine ingredients for glaze in small bowl.
    11. Spread glaze evenly onto rolls, and serve.

    I adapted this recipe for cinnamon rolls, since it requires no yeast, or waiting, or actual baking skills. All of which I have none of. You could easily make this gluten-free too just by swapping out the usual 'quick mix for the GF version. And they're vegan!
