Instead of just blending a slice of key lime pie and mixing it with some oats, I made these key lime pie overnight oats instead. They're creamy. They're easy. And a little bit sweet, a little bit tangy. Just like me.

How to make these key lime pie overnight oats
Start by combining ½ cup of rolled oats with ½ cup of milk (you can use whatever milk you prefer. I used unsweetened soy milk), 1 tablespoon of lime juice, 1 teaspoon lime zest, 1 teaspoon vanilla extract, 1 teaspoon chia seeds, ¼ cup plain Greek yogurt, and 1 to 2 teaspoons of honey in a mason jar with a lid, or a resealable bowl.

Refrigerate at least 4 hours, or preferably overnight. Before serving, crumble one square of a honey graham cracker over the top. Sprinkle with extra lime zest if desired.

- Don't add the graham cracker until you're ready to eat. This helps make sure they stay crispy, just like a graham cracker crust!
- You can use either key limes or regular limes in this recipe. Key limes are more authentic and aromatic, but regular limes are often less expensive and available.
