Hiya friend!

After my week of blogging detox, I’m feeling fresh, rejuvenated, and ready to rock the chakra out of this blog post!

..or maybe that’s just my afternoon tea sesh talking.

Whether it’s the fact that winter is lingering around far past it’s welcome (it snowed…again), the fact that I’m going to Puerto Rico in less than a month (!!) or my everlasting love of salads, I am 10 times ready for Spring to effen sprung already.

So I thought we could all make like a leaf and turn ourselves green with salad-inspired smoothies. You know, show our love to the Spring Gods who can rain their iced coffees and flip flops upon us.

My aunt Melissa makes this killer strawberry spinach salad with crumbled goat cheese, fresh sliced strawberries, and candied walnuts that everyone always devours. Β It now makes it’s appearance at nearly every family gathering, but tastes especially good under a blanket of springtime sunshine.

Or in….liquid form?! I didn’t go SO cray cray on you and add goat cheese to this smoothie madness, but don’t think it didn’t pass my mind. Instead, I added my dear friend avocado to bring it’s sulky cream-ness to this smoothie party.

And a little dabba apple cider vinegar in place of a full-blown vinaigrette. It’s tart and tanginess makes this feel like you’re actually drinking a strawberry spinach salad…in the best way possible…Like really guys, it’s good. You want Spring soon don’t you?!

Ingredients

  • 1 1/2 cup unsweetened almond milk
  • 1 cup strawberries, frozen
  • 1/2 avocado
  • 1 tablespoon chia seeds
  • 1/2 tablespoon apple cider vinegar (or lemon juice)
  • handful fresh spinach

Instructions

  1. Add ingredients to blender, and blend on high until smooth.
  2. Top with additional chia seeds and strawberry slices if desired.

    Ooooh. We do this here BUT Id never ever thought of adding in the Apple cider vinegar!!!
    We will try this morning and I will let you know if we can taste a difference!

    i make something similar almost every morning! frozen strawberries are the rest and you can’t even taste the spinach (good for me since i am not a huge fan of veggies)!

    I looove adding avocado to smoothies. The extra creaminess is just perfect. Lemon probably gives this an extra bright and fresh flavor too!

    Lovely recipe! We went to Puerto Rico in February last year and it was one of the best vacations that I have taken. We stayed in Old San Juan for the first half and then hit the beach for the second half! Enjoy
