Hiya folks!

I'm coming to you this morning instead of Friday's originally broadcasted post since it's

err..Sunday...morning. And it's RECIPE REDUX!!!!!

reciperedux

Here's what the last theme of 2014 had in store:

Grab a Book & Cook
It’s the end of the year and we’ll taking a moment to reflect: ReDux has been around for 42 months! (Can you believe some of you have ReDux-ed 42 recipes?) To celebrate, we’re playing a little party game this month: Grab your nearest cookbook and ReDux the recipe on page 42 or 142. We can’t wait to see the books you’re cooking from these days – and how you make that recipe healthier.
(Of course, please don’t forget to give credit the original recipe – and change enough of the recipe to make it your own!)

So to the cookbooks it went! One of my favs came from my brother a few Christmas' ago, and pays homage to our New England roots

new boston globe cookbook

I was excited to see what page 42 had in store for me. Whoopie Pies? Chowder? Lobster rolls?

Gazpacho.

Coming from the girl who drinks all beverages warm from Halloween to Easter, cold soup just wasn't going to happen. Plan B to page 142..

Chicken salad! A little bit better. Well my first thought was I don't eat chicken so there goes that.

And I eat tuna A LOT. And as much as I love my salmon patties, it was time for a change.

And I made it super simple with the skinless, boneless variety of canned salmon. And if the thought of canned salmon scares the gag out of you, I have converted many non-canned salmon believers with this one.

How did you know I have been opening up my cabinet and staring at the can of salmon in there, thinking, "I should really do something with that," repeatedly over the last week? Love the addition of peas...

I'm with ya - not gazpacho happening this time of year. I eat a fair amount of canned tuna too and yet usually forget about the canned salmon - great way of mix up a salad sandwich for sure.

I'm always looking for more ways to eat tinned salmon, although I like to mash up the bones with the meat for an extra calcium hit. Pinned for later.
