WIAW: With Sunbutter

March 2, 2016 by Emily Cooper 10 Comments

Hellll-oooo hump day!

A very frigid and rainy hump day, but I’ll take my humps any way I can get em.

Well that came out horribly wrong. Shall we awkwardly segway now?

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

After making shamrock shake chia seed pudding, I’ve been making overnight chia pudding so much more often than I have in the past. AKA like two times now.

2 tablespoons chia seeds // 3/4 cup unsweetened almond milk // 1 scoop chocolate protein powder // 1/2 cup blueberries // 1 tablespoon sunbutter // 1/2 tablespoon coconut

There must have been something in the air today, because almost everyone at work was ravenous at all times, myself included. I barely made it to 10 AM before faceplanting into my snackity snack snack.

Since I left my jar of homemade sunbutter at home, I resorted to a tablespoon of peanut butter instead. Woe is me. I guess I did celebrate national peanut butter lover’s day afterall!

And then by 11:55, I was still ready to go to town on lunch. Those last 5 torturous minutes were not happening.

romaine // guacamole // baked chicken breast // salsa

My taco salad game is still going strong. All it needs is a dollop of Greek yogurt to perfect this meal, but since I’m giving up dairy for the moment, an extra scoop of guac will have to do.

Now that the place I moved has a gym, I’ve been more motivated to get back into my fitness routine. Since I did my favorite upper body routine the day before, I simple walked on the treadmill, watched SVU, and ran during the commercial breaks.

And was more than ready to show a plate of food what I was made of. Midweeks just make you a hangry beast is my conclusion.

homemade salmon burger // green beans // soy sauce // mustard

And since Trader Joe’s sweet potatoes are priced per piece instead of per pound, I always dig for the biggest ones I can find to get my money’s worth. Am I the only cheap frugal gal to do this?

sweet potato // sun butter // maple syrup

Then I always eat half, leaving the other half on the kitchen counter to be eaten at a later time. Until I say eff it and eat the entire thing, smothered in more nut butter, standing over the kitchen sink. Every. damn. time. I will never learn.

And that’s my day full of sunbutter-ed eats at almost every meal. You may want to look away from this one my beloved peanut butter. Much love.

Thanks to Jenn for hosting!

Make it a great day!

What’s your favorite kind of nut butter?

Would you rather be super starving or super full? Super starving. Super full is the worst!

Bananas and peanut butter will always be my favorite simple snack.

Sunbutter is sooooo good. Probably my second favorite to peanut.
I always go for this biggest bang for my buck! Why not?

It’s funny, I’d rather be super full if I’m trying to go to bed, and super starving any other time. Sometimes a really full belly puts ya right to sleep 🙂
But I like to avoid either most of the time haha

I’m finally getting the urge for smoothies, so the next time I’m home I’m getting my blender to bring to my studio (i have no idea where I’ll plug it in, but I’ll cross that bridge later). As for nut butter, I pretty much like it all!

Do you remember the ‘no-nut’ butter that was at the GFAF expo last year? I bought a jar of the chocolate stuff. It was made from peas and wasn’t really healthy or anything at all but legit tasted like you were eating brownie batter out of a jar. Your post randomly reminded me of it. I’m glad (and sad) I only bought 1 jar.

Also, I do the same thing with bananas at target because they are priced per banana. I’m always like where is the largest banana I can find for my 29 cents.

OMG I’ve been thinking about that butter since I saw it there! Was curious if I could make it myself somehow. So good!
