I hope you’re enjoying your Veteran’s Day, especially if you’ve bravely served for this country. I hope you get all the free coffees and hot fudge sundaes you can stomach today…because that’s what I’d do.
Instead, I’m lucky enough to have the day off from work, so I’ll be partaking in plenty of sweatpant lounging and Friends watchin’ for a good portion of the day. I’m already on season 8!
And of course, satisfying my never ending..when I’m doing nothing hunger. Let’s mow down with my main gal Jenn!

And so my love affair with all things green continues…
This time with a kale & leek frittata topped with guac, alongside 1/2 cup of Gingerade Kombucha. I’m trying to make the stuff last longer than one sitting for once.
Followed by an apple and tablespoon of pb. I gotta get my fix in early.
After getting caught up in talking about the distant memories of school dances and Tamigotchis, I totally neglected to snap a picture of my lunch until it was a pile of leftover debris.
My usual salad with tuna, 1/2 an avocado and cucumbers, plus apple numero dos, and a Strawberry Siggi’s. Don’t tell Pumpkin & Spice, but this may be my new favorite flavor addiction.
My yogurt was supposed to be my afternoon snack, so I munched on some baby carrots instead before my afternoon class with some ever eager kiddos and some homemade veggie pasta sauce in the making.
My new favorite cooking term that we came up with.. Hulk Smashing Garlic. The ONLY way to get the skin off a clove, and practice anger management simultaneously.
Now that I can bake chicken breast #likeaboss, I can’t get enough of it.
And I’m just a sucker for anything on a bed of lettuce. And all the green things make their daily appearance again.
After a quick HIIT cardio sweat sesh, I refueled with my new favorite lazy girl mug cake.
A scoop of chocolate protein powder ( I use MyProtein brand), 1/4 cup vanilla almond milk, and a dash of baking soda.
Mix, microwave for 25 seconds, top with a tablespoon of pb and whipped cream. BOOM.
It gets a little rubbery if you cook it too long, but you can’t really complain with 3 ingredients. I just microwave it just until it holds together, leaving a delicious pool of warm choco at the bottom. Addicted.
