WIAW: Winner, Winner…

August 17, 2016 by Emily Cooper 12 Comments

Well golly gee, it’s Wednesday!

I’m having one of those weeks where the days dragggg onnnn, but then it’s Friday in like 2 seconds  so all is right with the world. Ever have those?

Either way, it’s time to share your best eats, or be square. Which is like, the new circle cuz we all about them curves girl.

What I Ate Wednesday Logo

I woke up to the fact that I was the grand prize winner of Kathy’s super mega awesome summer giveaway, which after winning the stitch fix prize from The Recipe Redux, I’m thinking a lotto ticket needs to round out this winning streak.

Backpack with Smoothie

Followed by Jillian Michael’s week 3 torture of Ripped in 30, an icy shower, and a smoothie on my walk to work. 1 1/2 scoops of vanilla whey, 1 tablespoon peanut butter, 1 frozen banana, lotsa ice.

Not as pretty as my Monday smoothie bowl, but it did the trick for a post-workout breakfast on the go.

After teaching some youngins’ all about the different kinds of apples, snack time had me craving one thing and one thing only.

Sunbutter and Apple

Apple and peanut butter! Okay, so maybe that’s two things, but who’s counting.

Pink lady (my fav) and SunButter since I forgot my jar of pb at home. Womp womp. Luckily I actually adore sunbutter too, unlike my disgust for almond butter.

Collard Greens and Tempeh

Lunch was pretty ronery, since I was the only one in the office, which is why it’s safe to say I had no problem conquering this bowl of sauteed collard greens, zucchini, and tempeh with hummus in a matter of 5 minutes. 5 minutes 30 seconds if you count the peach.

So I took it to the streets for a walk around the block for the rest of lunchtime to avoid the dreaded post-lunch narcolepsy that usually occurs behind my computer screen.

I planned on doing some yoga in the park after work, but thanks to a (much needed) rainshower, I took it to the mat with Adriene instead.

Yoga with Candles

I did her Yoga for Gratitude video, which with the sound of rainfall and candlelight was everything I needed for the end of the day.

And when your grocery shop procrastination game is strong, it’s winner winner…

Breakfast for Dinner Plate

Breakfast for dinner!

I was craving eggs and toast, so two fried eggs, pb toast it was. Plus a side of collard green salad from Eating Bird Food because I needed some greenage in my life, and this is my favorite way ever to prepare collards. Holla, colla!…rd greens.

Apparently rainy days and winning things makes you extra hungry, so I polished off what remained from blueberry picking this weekend, plus a protein mug cake for a nighttime snack.

protein mug cake and granolaJust a scoop of vanilla protein powder, 1/4 cup almond milk, and dash of baking powder, stirred, micro-ed for 30 seconds, and devoured in just about the same amount of time.

Fin.

Make it a great day!

What’s the last thing you’ve won?

Favorite kind of apple?

Every time I buy or make almond butter I’m like. I mean.. this is okay. But PB. When I make it I’m usually obsessed for like 10 minutes right after and then I’m over it. Peanut butter will always and forever have me heart.

I love your dinner of procrastination. IT looks so good; simple dinners are so nice when I just don’t feel like cooking. They are really refreshing.

I love that anchor towel, love love love. Yoga by the candlelight sounds like a perfect way to unwind from the day. I have won a few giveaways, after saying I never win everything, so maybe my luck is changing!

I love honey crisp apples and have somehow yet to try Sunbutter. I was so tempted to buy some last week but told myself I need to use up all my random other nut butters before I do, lol.

Congrats on the win! I never win stuff… except once when I was 12 I won a giant stuffed Meeko (the raccoon for Pocahontas) from the grocery store. LOL!
