Happy lady lumps day my friend!
It’s about that time for us to meet, greet, and embarrass our friends and families with the amount of food pictures we take in a day, for it’s What I Ate Wednesday!
It had been a while since I had my usual go-to breakfast, so since I had the extra time in the AM, I decided to revive it from the breakfast graveyard.
1 egg // 1/2 cup egg whites // feta // asparagus
And I guess that’s where it should have stayed since my omelet flipping skillz failed me horribly. It still tasted delicious, and there was coffee so let us all be grateful for that.
Plus an apple for a breakfast dessert. Necessary.
And that’s when it all went down. I posted a pic of my milk & cereal pancakes on Instagram and for whatever jackpot/technical glitch/pancake-god-loving moment it blew up. I went from crossing my fingers a post will reach the dreaded double digit threshold, to over 600 (and counting) double taps. Y’all must love you some pancakes, and I applaud you for that.
Since popping bottles of champagne is frowned upon at work, I settled for lunchtime instead. Some turkey lettuce wraps with Dijon, avocado, and baby carrots and pickle on the side. I don’t care what way, shape, or form your sandwich is in, it friggen needs a pickle as a wingman. End of story.

Thanks to a work meeting, I still had my snack to go along with my afternoon coffee fix. What a midday nap saver.
A strawberry Siggi’s topped with peanut butter & peanuts for a makeshift crunchy pb topping. It was like a pb & j parfait, and was effin delicious.
After I got home from work, I did this workout from miss PB Fingers, which left me a sweaty and hungry mess which is never a pretty combination.
Dinners as of lately have been a hugh jass pile of veggies and some sort of protein, which leaves me super satisfied the majority of the time. This go around was salad with steamed green beans and chicken, topped with Trader Joe’s Gyoza Dipping Sauce as dressing.
One day I will buy or make actual salad dressing, but mustard/dipping sauce/hot sauce are worthy stand-ins for the moment (aka two years and going).
