I don’t think I’ll ever tire of three day weekends or four day work weeks. Or telling you how much I love three day weekends and four day work weeks.
And sharing my day of eats with all you wonderful people.
It’s the middle of October, and I’m still wearing t-shirts and shorts with my windows open around my apartment.
1 cup unsweetened coconut milk // 1/2 avocado // frozen spinach // 1/2 banana // chia seeds // hemp seeds // dried cranberries
And so my love of creamy green smoothies has yet to die. It’s like the 8th wonder of the world how creamy frozen bananas and avocado make and liquid they touch.
On the days I spend the mornings counting down the hours until it’s socially acceptable to eat again, I usually bide my time with a morning snack. Teaching morning classes and a work meeting occupied my time instead, so I went to town come lunch time.

Some days call for eating every hour, on the hour, some satisfy with a substantial breakfast and modest dinner. And some days you just forget to eat lunch.
Which has yet to happen to me. Ever. How do you just FORGET to enjoy the best hour of the day?!

Now that I finally have a real kitchen table rather than the arm of a loveseat to eat meals on, I made a real meal like a real person. I’m beginning to think I may actually have to wear real clothes and stop laughing at fart jokes at some point in the near future. That day is not today my friends.
I used Ali’s recipe for the chicken, and O-M-G, it’s the first and only hunk of meat I’ve really cooked for myself that was actually moist, flavorful, and didn’t require a mountain of mustard in order to choke down. The secret’s in the brine!
Besides a few handfuls of tortilla chips eating with my after school nutrition groups homemade salsa, and a pb covered carrot, that was my day. I’m usually a snacker, but today it felt good to get in 3 square meals, and feel satisfied with ever bite.
