Can you believe today is the first official day of fall?! It’s finally cooling down up here in Portland, meaning it is acceptable to embrace all the things pumpkin, apples, and boots!
And all things WHAT I ATE WEDNESDAY! Thanks to Ms. Jenn.
The morning started with some fast breaking in the form of egg breaking.
2 egg veggie omelet // sauerkraut
I replaced my usual toast with a baked sweet potato and sunflower seed butter.
I’ve been eating these things like mad lately. At this rate I should be right on track for being a lifelike jack o’ lantern for Halloween.
And the most unattractive snack goes to..
Decrepit banana and sun butter! Don’t judge a bruised banana by it’s peel.
Come summer or winter, I still love me some salad.
Romaine salad // tuna // 1/2 avocado
I know it’s so RD for me to say, but salads are seriously one of my favorite meals. And I’m not just talking a pile of iceburg. I’m talking fully loaded.
And an apple on the side for fall’s sake.
And once the dinner bell toll, I wanted one thing and one thing only.
ALL THE SALAD!
I had some of my Paleo chili waiting for me, but all I wanted was a taco salad!
That is a lazy girl’s taco salad with ground turkey, guac, cukes, and mustard because I never remember to buy dressing. Sometimes I eat two bowls of fro-yo. Sometimes it’s two salads. Balance, baby.
Followed by some frozen strawberries heated up with almond milk and cinnamon for a little something sweet.
