    WIAW: A Tale of Two Fishes

    Heeeeeyyy....you!

    I'm terrible with names. Unless it is a band/puppy/or brand of peanut butter. The things that occupy my brain space....

     

    And I never forget what Wednesdays are all about.

    All the food!

    Breakfast

    Eggs on Toast with Coffee

     

    Fast breaking started with coffee (duh) and a couple pieces of wheat toast (Vermont Bread Co is my fav), one topped with hummus, and the other with peanut butter plus a hard boiled egg.

    Is it just me, or does anyone else always have a rebel egg? One of them peeled #LikeABoss, while the other took half it's body along with the shell, and crumbled once I cut it. There's always that ONE egg...

    I had a really unflattering bowl of Greek yogurt and peanut butter before teaching kids about fruits and making strawberry roses, but lucky for you I didn't snap a pic. Instead, here's my colorful and much more appetizing lunch.

     

    Tuna Salad with Sauerkraut

    The usual #TunaTuesday suspect atop some spinach, broccoli, and tomatoes, and red 'kraut from our CSA. They say red, but I say that ish is purple.

    Plus some leftover homemade Italian dressing from my spaghetti salad recipe.

    And a hugh jasssss dill pickle, because that brine game is going stronggg still.

    Plus a side of sweetness, with Ree and the giant peach.

    Dinner was pretty much a repeat of lunch, but with a ra-ra-ra-ra-REEEEMMMIXXXXX!!!!

    Salmon Salad on Greens

     

    AKA salmon instead of tuna, and frozen broccoli instead of fresh. For when you realize you forgot your credit card while in the checkout lane, and it's too hot AF to exert any actual energy. These are the days, my friends.

     

    Plus a sweet potato loaded with sunbutter and cinnamon, all the while realizing I still had sweet potato ice cream left in the freezer. Palm + face = D'oh!

      I love seafood except for oysters and I'm not a huge shrimp gal. My favorite no cook meal would have to be a HUGE salad or a wrap or a sandwich. 🙂

      I love seafood, I'll eat pretty much any seafood. I have been pulling random items out of the freezer this week to reheat because I don't want to do any actually cooking in this heat.
