WIAW: Taco with Tissue Paper

Ahh Wednesday…smells even sweeter when it’s my work week Thursday.

 

On second thought, I hate Thursdays. Let’s just eat and forget our problems, kay?

 

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Breakfast

Breakfast was a big one. A jumbo jet fluffy omelet with 2 eggs + 2 egg whites with a side of green beans, and a sweet potato with peanut butter. Not to mention a good drizzle of hot sauce and cinnamon. It just works.

Morning Snack

 

IMG_0666.PNGTo go along with my coffee and Pinterest browsing break, I gobbled down one of my chocolate coconut protein bites. I’ll share the recipe soon, pinky promise!

 

Lunch

 

IMG_0664.PNGSince I can never get enough of my favorite meal, I paid homage to it with lunch today.

Kale salad + 1/2 T oil & 1/2 T cider vinegar + 1 T sunflower seeds + Shredded chicken + 2 corn tortillas + personal stash of tabasco

As much as I love corn tortillas, they end up crumbling and falling apart before I can even shovel the whole thing into my mouth. It’s like making a taco with tissue paper.

 

IMG_0665.PNGAnd my personal motto “a meal ain’t complete, without somethin’ sweet!”

 

Dinner

 

IMG_0670.PNGDinner was a sad sight as I was ravenous after my tabata workout. That whole sticking to the pan thing…a process I’m all too familiar with.

Grilled tilapia + steamed broccoli + Italian seasoning + Dijon

I also think a meal is complete with some form of dippage. Sweet dippage? HEAVEN.

Dessert

 

IMG_0671.PNGA nice blurry picture to end the day. Now I must say, “cottage cheese” and “dessert” don’t usually enter my vocab in the same sentence. It was pretty tasty..for cottage cheese and protein powder..

1/3 cup cottage cheese + 1 T chocolate protein powder + 1/2 T crunchy PB

It was almost like chocolate tapioca pudding…Because I’m sure that sold it for you.

What’s your favorite condiment?  I would say peanut butter, but that’s actually a food group.

    Not going to lie, I’d totally faceplant that cottage cheese for dessert- Especially with the mixed in protein powder!

    I love that motto! It’s been a habit of mine since who knows how long! I eat an apple at the end of every single lunch I bring to work. I heard they’re doctor repellent or something?

    Hi Emily! I”m Emily too! 😉 Those protein bites look good. I actually just experimented making my own last week, and now that I have dates (I used raisins last week) I plan on making up a new recipe today!
