Little hi little ho my fine looking friends!
Pardon my absence, but sleepless nights on air mattresses, starting a new job, packing my life into three car loads, and putting together my new life in Portland somehow was a bigger priority than sharing my cups of lukewarm instant coffee and lentil soups out of an old (but clean) peanut butter jar. Not sure how that worked itself out.
As sad as I was to say goodbye to my life in NH, I am equally excited to begin the next chapter in my life, and see where it takes me.
But I’m back like I ain’t evah left for another What I Ate Wednesday full of Portland-ic eats!
3 medium eggs // kale // sriracha mustard

I have voluntarily spread this stuff on almost as many things as pb has graced its presence with.
Okay, this may have technically been from Saturday, but it was too pretty not to share. I took Papa John and Lisa out to the hot spot of NOSH after hauling all my crap into the apartment.
I ordered the Banh Mi with a salad instead of the roll, which included Chinese sausage, the most incredible pickled vegetables, and my first try at pate. It’s safe to say I demolished it, as well as many of their famous bacon dusted fries.
One thing I didn’t have to spread my new mustard love on was a batch of these new Blue Diamond Almonds!
The flavor kinda reminded me of the BBQ almonds, but definitely had that “sweet heat” I love about sriracha. The only bad, or good part depending on how you look at it, is the cheeto fingers you’re left with at the end.
