And a happy February 1st!
That means only 13 days to expedite a dozen of these chocolate pb strawberries to your special someone (me).
While I wait, here’s what good eats I chowed down on in the latest episode of…
Yesterday morning was CRAY-zee busy, so smoothie on the go it was.
1 1/2 scoops chocolate protein powder ( I use MyProtein) // 1 frozen banana // 1 tablespoon peanut butter // Nutrigreens powder // water
…and by on the go, I mean in 1 minute flat above my kitchen sink. Thank God I put on that sip lid!
Then it was off to talk about Jerry the Cantaloupe Cat and eat all the citrus fruits at library story time with some youngins. Eating and library-ing. Why I love my job.
But it’s not a Tuesday without T.U.N.A!
This time mixed with some cottage cheese (cuz I’m gross) and taco seasoning, with salsa, avocado, and quinoa for a spicy, taco-y tuna salad…..not eaten over my kitchen sink.
Plus one of the orange ginger coconut protein bites I shared on my instagram earlier this week.
Those bits of crystallized ginger in there are everything.
Since I didn’t get to enjoy my morning cup o’ tea, my day truly didn’t start until about 2PM.
Which marks the 30th day without coffee! I initially gave it up to try and help my digestive issues, but since those haven’t really improved much (sigh), I’m still doing it to try and lower my tolerance for the good stuff back down to one cup rather than one pot.
Lately I’ve been loving black tea with milk and sugar. It brings me straight back to childhood and visits with my Nana where we always had tea with milk and sugar. Nostalgia tastes the best.
After a riveting afternoon of reading up on the digestive system (my favorite, obvs), and trying to prep for tax season (yay!), I was more than ready for food and sudoku puzzles.
Some of the tempeh red curry I made up last night over some quinoa. I threw in some tempeh, eggplant, peppers, onions, broccoli, garlic, crushed tomatoes, curry powder, a bay leaf, and cinnamon (my secret curry ingredient), and topped with yogurt and green onions.
It was such a stick to your ribs satisfying meal for the blustery nights we have been having lately.
Followed by a nightcap of yoga with Adriene, ginger tea, and sweat pants. Now that’s my kinda happy hour. 🙂
