FOOD. Gah-lor-ious food.
As I mentioned, I’ve been trying to incorporate more plant-based eats back into my diet, starting with some pea protein in my morning smooth.
1 cup unsweetened almond milk // 1 1/2 scoops pea protein ( I use MyProtein ) // 1 tablespoon chia seeds // 1 tablespoon almond butter // 1/2 cup strawberries
The verdict? I could become a elementary school math teacher with the amount of chalk in this. They only had unflavored pea protein, so a few drops of liquid stevia and a pile of coconut let me choke it down. Good thing I have 5 pounds of the stuff…
…And it didn’t fill me up whatsoever. I was already hungry for a snack at 8:30, but managed to hold off until 10 so I could pretend I’m a semi-normal human-being.
Lucky for me, lunch was a monstrosity of a meal. I made a giant batch of minestrone soup, and added in lean ground turkey for extra protein. If only I remember the parm cheese on top! Seriously brings it to anotha’ level.
Along with one of the million clementines in my fridge I am trying to work through. Citrus for dayzz.
And then…my new favorite meal happened.
romaine // lean ground turkey // salsa // avocado // plain Greek yogurt
Taco salad! Of course it’s still a salad, but oh man this one has my heart..and stomach…and I’ll give it my left kidney too. And never, I mean NEVER forget the avocado or Greek yogurt. You’ll regret your entire life’s decisions if you do.
