It’s Wednesday and I’m so excited!
Not only is it a sunshiney day, AND I’m going to a Michael Franti concert tonight (!!) but it’s also my favorite food-filled day of the week
….that starts with the letter W.
I made some bittersweet fruit ice cream with one of my kiddo nutrition classes for the last session of the school year. The mango was sweet and creamy, and the strawberry version was a bit more bitter. Literally bittersweet. The food metaphors running deeeeeeep today.
2 eggs // spinach // mushroom // 1/4 avocado //hot sauce
So I whipped up the quickest omelette of ma life, and ate it in half the time before running back to the office.
Where I filled my hands up with leftover walnuts from my nacho recipe, because with me, the hunger never ends. Plus ALL THE COFFEE for everyone’s safety and well-being in my general vicinity.
I pretended it wasn’t the windy and weatherman-lying-whyd-i-wear-shorts-today kinda afternoon, and ate lunch al fresco with the man friend.
..except that I forgot my can of “Tuna Tuesday” albacore, so loaded my greens with some walnut cheese sauce in hopes that this salad would keep me full for at least 30 minutes.
I must have set a world record or something, because I made it a whole hour before I was ready to fill my piehole again.
In went some plain Greek yogurt topped with a scoop of pb and more walnuts plus cinnamon.
I really wanted to sprinkle on some chocolate covered pretzels that were straight up chillin in the break room, but knew that would lead me down a dangerous road of tipping the entire bag back like a box of Franzia at a sorority party. Not a pretty sight. I’ll stick to da nuts and control myself.
After getting nutty all day, it was time for some regularity in my life once I was back at the home base.
The usual salmon patty with green beans and a sprinkle of cheese plus all the Dijon. The only thing that gives peanut butter a run for it’s money in this house is mustard. I could easily go through a bottle a week. AKA I usually go through a bottle a week, easily. Judge me.
