Salutations and good vibrations my friend!
Somehow life and the universe aligned so that I would yet again be recipe-less this week.
From running for hard cider…
…to brunchin and bee adventures.
It just didn’t happen.
After finally hunting down a lone stalk of rhubarb, and having more than 20 minutes of downtime today, here’s crossing my fingers that next Monday will fill your patient foodie little heart with joy.
…But for now, WE EAT.
I started off early with my morning cooking class, where we made “veggie sushi”, aka a veggie hummus wrap cut into pinwheels. It’s amazing how much kids love things more when you call it something different.
I called one of these bad boys breakfast, and took this ultra classy picture next to an empty box of breaded chicken. Isn’t it ironic…
Thank the heavens above it is finally semi-resembling spring now, and I can walk to the office without hating life every second. A meeting and some emails later, adult recess was upon us.
AKA lunch. AKA the best part of the day.
I ate some leftover Greek quinoa salad over a bed of arugula, which may or may not have made me into a quinoa convert. And/or because I had no other option and was starving. After picking out the olives (gross), it was super tasty.
With an early workday and the sunshine upon us, I took advantage of it and got to shooting some b-ball outside of the school…er park before meeting up for Otto Happy Hour.
Maybe one of the best deals in Portland. $4 drinks, and a free slice with every drink. BOOM.
I opted for a slice and half of the sriracha chicken and avocado with a couple Downeast Cranberry Cider. I always think I have a stomach twice the size, because I can never put down two slices of these behemoths.
The fact that every meal in the day was eaten on a paper plate means I am now officially the queen of Keepin’ it Classy. Bow down to me.
