I tried to think of some witty joke for April Fools, but then I got distracted by more pressing matters.
Instead let’s not spread ourselves too thin, and focus on an incredible day of WIAW eats!
Almond milk // chia seeds // flax // spinach // 1/2 banana // 1/2 small avocado
The avocado makes it so flippin creamy. Like.. milkshake status.
With a side of a GF chocolate chip zucchini muffin since I needed something to chew on for it to count as a meal.
Lunch was a slice of Diane’s zucchini & carrot crustless quiche minus the bacon with a side of collard greenery. I just like wrapping things in them. So if you get a gift from me…
This is when the fall kicks in. I made my own kinda trail mix, tossing some sunflower seeds, cashews, and raisins with pumpkin pie spice. I immediately wanted a cozy sweater, crunchy leaves, and pumpkin flavored everything. Too soon? NEVAH!
The fall comfort continued with some of my chicken pot pie ( after I gave it a makeover). Pearl onions make a big difference let me tell ya. So hearty and soul warming.
Followed up with some sauteed cabbage topped with raisins. If you don’t think you like cabbage, cook it up with some cider vinegar, cinnamon, and top with raisins and you’ll be surprised. It was borderline dessert. But since it’s cabbage that will never happen. Still delicious and fall-esque.
