Sorry for being MIA on Monday, but between Easter and getting ready to move a recipe just didn’t happen. A whole lot of life did though.
But I’m popping back for a quick WIAW post so get excited!
Instead of showcasing my thrown together, “does this even qualify as a meal?” recent eats my crazy world, let’s take a look-see at my much more attractive day of goodness on (F)easter.
1/3 cup oats // 2 eggs // 1/4 cup mashed butternut squash // 1 tbsp pb // pumpkin pie spice // maple syrup
Except, like many things (peanut butter) I tend to over do it. Three cups after 40 days of coffee sobriety proved to be too much. I actually got really dizzy and lightheaded on top of shaking like a money maker. It was not fun. I’m happy with a one-cupper for now.
MJ & I went to my brother Nate’s house for our big Easter meal, which was all kinds of delicious. I wasn’t really ready to take the plunge into ham-land, so I opted for a mountainous portion of all the veggies..and a hard boiled egg. BALANCE!
Roasted asparagus // spinach salad // brussel sprouts // glazed carrots // roasted potatoes // hard boiled egg
We also had some fresh strawberries & whipped cream for dessert. Simple but the perfect way to have something sweet without feeling like living in spandex for the next 8 days. I’m gunna do it anyway just to make sure.
While I was plenty full for most of the day, when we got home I was feeling a little snacky. A small sweet potato with pb was the easiest thing to make, aka the only food I really have at the moment before I grocery shop. No picture, but take a gander at my pictures from Easters past because I’m adorable.
