Did we all survive Mexican St. Paddy’s Day?
I didn’t whoop it up too much for being a Tuesday. I did have some delicious eats though!
After my 3 week elimination diet, I am finally adding in one food at a time to see what may be the culprit to my stomach ish. Since I suspected eggs were the culprit, I decided to add those back in first.
2 eggs + 1/2 plantain fried in coconut oil + 1 tbsp sun butter
Although I have to admit I wasn’t too strict with these past 3 weeks. Especially with a slice of pizza this weekend, aka both wheat and dairy. I’m not showing any signs of a big food baby so far, so I think I’ll survive.
Lunch was some leftover salmon patty from last night’s dinner, thrown in with some rice & beans, broccoli, and greenery.
After a sugar-free almond milk salted caramel iced latte (what a coffee snob I am) and some Honey Dijon Blue Diamond almonds, I was ready to get some work done.
After serving up the last of my sangria, I headed out with the g-rents for a Mexican fiesta at my favorite El Colima.
As much as I scour the menu, I always end up getting the fajitas. This time with chicken!
I may or may not have pounded my chest in glory for finishing almost the entire thing for the first time. Put that in your ole and smoke it fajitas!
