WIAW: Beets Me.

Howdy friends!

I am LURVING this warmer weather. It was 50 degrees yesterday! Is this Florida or New Hampshire now?!

 

That sure makes Wednesdays all the more enjoyable. Know what else does?

 

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

 

You saw that coming didn’t you? ๐Ÿ˜‰

Breakfast

1/3 cup oats / 1 tablespoon chia seeds / 1/2 scoop protein powder / 1 tablespoon cocoa powder / 1/2 cup almond milk / 1 tablespoon pb

I made overnight oats for the first time in I don’t know how long. And they were just as chewy and creamy as I remember. Believe it or not there was actually TOO much PB for me. I like a good ratio of food to pb to avoid it clinging to the roof of my mouth and feeling like a dog chewing gum. It’s a science.

 

 

Lunch

chopped romaine / sliced beets / 2 hard boiled eggs / 1 tsp olive oil / 1 tsp sunflower seeds / 2 tablespoons homemade beet hummus

I love how I always end up pairing hard boiled eggs with beets and making my salad look like I’m dyeing Easter eggs. I made some beet hummus after seeing it at Trader Joe’s, but wasn’t quite beet-y enough for me. Beets me what could have gone wrong! ๐Ÿ˜‰ (waka waka)

Paired up with a clementine because a meal isn’t complete without ending with a.) something sweet b.) a pickle spear or c.) a piece of gum for when the other two are unavailable. And am I the only one who feels #likeaboss when you get all the peel in one go? Like that’s resume-worthy material.

Snack

Since it was all crumbly and called to just be shoveled into my mouth and avoid the paparazzi, my peanut butter cookie dough cookie went unphotographed. So here’s a flashback photo from when I made them before.

And a nectarine. They’re starting to get all prune-y in my fridge, so I put this one out of its misery.

Dinner

Continuing my beetdown (somebody STOP meh!!) I topped my salmon burger with the remains of my beet hummus. Eaten cold. Out of tupperware. The things you do for hanger.

Washed down with some steamed zucchini and a handful of chocolate chips. The lazy girl’s way to dessert.

Snack

I tried to make the Purely Twins microwave english muffin, but my “winging it” ended up coming out like a bowl full of warm dust.

So I topped it with some applesauce and cinnamon and called it an apple measuring cup cake. #NoFoodLeftBehind.

And a hard boiled egg because I made an extra, and to add in some extra protein.

    I’ve been eating the crap out of some mandarines…We’ve only got a few left now! I’m proud we’ve actually gotten through so many!

    I need to boil some eggs to make hard boiled eggs…I’ve been meaning to for forever!
