Hearty Veggie and Sausage Soup


Units Scale
  • 1 (14 ounce) package Hot Italian chicken sausage
  • 1 small yellow onion, chopped
  • 1 large sweet potato, chopped
  • 2 large carrots, chopped
  • 1 large green bell pepper, chopped
  • 1 summer squash, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen leaf spinach, thawed
  • 1 (28 ounce) can diced tomatoes
  • 1 (8 ounce) package sliced button mushrooms
  • 3 cups low-sodium chicken stock


  1. Heat a large stockpot over medium-high heat.
  2. Remove sausage from casing, and cook in stockpot until browned.
  3. Add onion, sweet potato, carrots, and bell pepper to pot, and cook for 3 minutes.
  4. Add squash and garlic, and cook an additional 2 minutes.
  5. Add spinach, tomatoes, mushrooms, and stock, and bring to a boil.
  6. Reduce to a simmer, and cook and additional 5 minutes.
