After my week long vaca, I am shipping out of the 603 and off to start the new chapter of my life in Portland! (Maine that is)
So Imma make this post short and sweet since starting a new life comes with quite the list of to-do's. Mostly involving coffee and Target runs.
Never happens.
I love coffee. Coffee loves me. We've even taken our relationship to the next level in food form.
When Purely Inspired reached out to me to check out their organic and plant-based chocolate protein powder, I knew I had to throw the ra-ra-ra-REEEEMIIIIIIIIX on that ish.
I've been trying to find a protein powder I truly like without containing 26 different forms of sugar substitutes and unnecessary ingredients such as rose hips or isolated defatted hydrolyzed super mega protein blend. Which is why I was happy when I pulled out the RD card and flipped straight to the ingredients list.
Just some veggies, rice, cocoa, added fiber, and stevia-style sweetener. Not to mention non-GMO, gluten-free, dairy-free, and soy-free. Free's all around!
I even tasted this stuff straight-up since that's the best way to explore anything new, right?
And it was much more velvety and chocolatey than any others I've tried. Chocolate velvet is a good starting point.
I knew I'd be traveling, so I needed a quick snack that'd be portable, easy to make, and requiring minimal ingredients and supplies. 4 ingredients later, and I had my coffee and snack fix fulfilled.

Vegan Mocha Protein Bites
- Yield: 4 1x
Ingredients
- 1 scoop vegan chocolate protein powder
- ¼ cup natural peanut butter
- 4-5 tablespoon almond milk
- 1 tsp espresso powder
- ½ tbsp vegan chocolate protein powder
- ½ tsp espresso powder
Instructions
- Combine all ingredient in a small bowl.
- Mix until dough forms.
- Add more almond milk if mixture is too dry.
- Form into 4 balls.
- Combine additional protein powder and espresso powder in a shallow dish.
- Roll each ball in mixture to coat.
- Category: Snack, Vegan
Coating the little fellas in more chocolate and espresso will really make sure to shoot you to the moon before a 2 hour car ride.
