Holy June! Time sure flies by once the warm weather comes. Where’s Marty McFly when you need him?!
This weekend was full of updates of all sorts in the best way possible.
Friday was officially my last day at my current job.Remember that teaser I threw at you? Well I will officially be starting a new chapter in my life and starting a new job in Portland, Maine!
I am beyond excited, and truly believe everything happens for a reason. I’ll be working as a Nutrition Educator mostly in the school system teaching kids all about being healthy. And that’ not even the best part. My office shares the same building as…THE FIRE STATION. If that isn’t meant to be, I don’t wanna know what is.
Saturday was another adventure in Maine, this time Ogunquit for a waterfront date night. A gorgeous walk along the Marginal Way in Perkins Cove, along with wine, steamers, and a view of the water. Perfection for a Saturday night.
Did I mention I was dating someone? Well…I’m dating someone. It’s been about a month or so, so I guess I’m a little late in the game. Moving an hour and a half away sure puts a bump in things though. I may have to put lighting fires at my desk on hold 😉
Sunday I had lunch with my best gal pal Hillary, who just got engaged! I am so excited to be a part of her big day as a bridesmaid, and there was no better way to celebrate than with sweet potato tots dipped in maple syrup from The Purple Finch Cafe. To. Die. For.
Afterwards, I went for the firs run in quite some time.
Okay, so that’s a lie. I did do an HIIT run last Monday, but it was at a gym so it doesn’t count as a true run for me. I’ve been focusing a lot more on weight training and tabata-style workouts during the week, and allow Sunday to remain a run-day for me, but only if the mood strikes me. I’d been craving a run since Friday, so I knew I would be making it happen.
While I was expecting my favorite running climate of overcast, cool, and maybe even rain, I ended up with pure humidity. I was a sweaty mess by the end, but it felt amazing to knock out 3 miles without hitting the pavement for almost a month.
Lastly, for this week’s recipe, I updated an old classic, and one of my favorite recipes on the blog, Vegetarian Mexican Lasagna, so be sure to hop over and check out the new and improve version here!
Make it a great day!
Tell me something about your weekend!
Tater tots or french fries?
