And what better way to celebrate than with a childhood favorite twist turned upside down.
I used to have either a pb & j or a grilled cheese as a snack after school just about every day in high school, and would openly consider a sandwich a snack food. Now that my body has maxed out it's growing potential, my bottomless pit appetite has scaled back to half a sandwich to hold me to over until dinner, but still love them as a snack.
Now of course I am usually one for making recipes healthier and more wholesome most of the time, but some things simply require soft, fluffy, refined, and totally void of any nutrition white bread, and grilled cheese is one of them.
If we're being honest here, I don't particularly like the taste of a lot of whole grain...grains, which is why I simply don't eat a lot of them. If I'm gunna have pasta, I'm gunna have some delicious scratch-made spaghetti loaded with non-whole wheat or gluten free flour. If I'm gunna have rice, I'm going for the fluffy snow white Jasmine variety, most likely topped with butter.
And if I'm gunna have a grilled cheese sandwich (which isn't very often), whole wheat isn't even a sparkle in it's cheese-filled eye.
I did however spring for some sourdough because that is really the only bread besides a hot crusty baguette from the streets of France that tickles my carb fancy. And real cheese. Like the saying goes....

No cheese product or margarine tubs for me or this sandwich. I went for the real deal with Real California Cheese, who is this month's sponsor for the Recipe Redux contest. Grilled Cheese & Tomato Soup Sandwich
- Total Time: 6 mins
- Yield: 1 sandwich 1x
Ingredients
- 2 slices sourdough bread
- 2 slices (2 ounces) Real California sharp cheddar cheese
- 2 tablespoons tomato paste
- salt and pepper, to taste
Instructions
- Heat a skillet on low heat, and coat with cooking spray.
- Spread tomato paste on one of the slices of bread. Sprinkle with salt and pepper.
- Top with cheese and the remaining slice of bread.
- Cook in skillet for 1-2 minutes, or until golden brown.
- Flip and cook an additional 1-2 minutes, or until cheese is melted.
- Remove from skillet and serve.
- Prep Time: 2 mins

I never had tomato soup growing up (though I had tons of grilled cheese sandwiches)! One of my fav food memories is my great grandma who used to always make us grilled cheese (on white bread) with a side of mandarin oranges. Still love that meal to this day.
