  • 3 cups corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped red onion (about 1/2 medium)
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons white vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large bowl, combine corn, tomatoes, red onion, and basil.
  2. Stir in vinegar, olive oil, salt, and pepper until combined.
  3. Refrigerate up to 4 days.
