Hi friends and Happy St. Patty’s Day! Break out the green beer and Irish soda bread while getting jiggy with the jig. Too bad it’s Monday and I’ll be in bed by 9. I will be quite content eating my boiled dinner minus the corned beef.
I spent the weekend down in CT with my best frand Hillary since we were long due for a visit. It is always nice to get out of the house for a change and also to spend time with my second hand gal.
After I arrived on Friday, we went out to eat at a place called It’s Only Natural. It is a vegan restaurant that has so many good dishes I can never settle on what to get without a good 20 minutes of contemplation. The two people I went with are not vegan and neither am I but it is just so fresh and good, vegan or not I swear you will love it.
I finally settled on the sweet potato enchiladas served with black beans and rice. Pretty much whatever I get is always a good idea.
PLUS. They had the best neon sign I have ever laid eyes on. This needs to be hanging in my kitchen, but sadly they wouldn’t bargain with me for it. For some reason they didn’t see our resemblance or that we are pretty much identical twins..
The next day was time for sunshine and St. Patty’s festivities. We started by enjoying the warm weather by visiting Gillette’s Castle and Devils’ Hopyard. The names alone makes me want to visit, but the fact that it included hiking trails and waterfalls was a double bingo. Sadly the trails were still frozen and slippery but we still enjoyed the scenery and sunshine.
Just typical us. Sometimes my foot has a mind of it’s own and wants a photobomb.
We sure worked up an Irish appetite since it was then off to a St. Patty’s party for lunch. It included Irish soda bread, green beer, and a sneaky little drink called a frozen leprechaun. It tasted like a mint chocolate chip milkshake…if a milkshake just turned 21.
I could only handle a few sips but it sure was good. I also knew I was in heaven when I spotted a golden halo of Emily food on the counter. Honey, I’m home!
We also were in charge of making a green dessert which resulted in green marshmallow brownies topped with crushed mint oreos. I really wish I enjoyed the mint and chocolate combo more, but it just doesn’t do it for me.
I’m pretty sure I am the only American girl who does not like mint chocolate or romantic comedies. Give me chocolate and pb and a good horror flick and we’ll talk.
We spent the rest of the night playing LCR which was my first time and won’t be my last. It was so much fun and the easiest game ever. A combo like that plus playing with scratch tickets made for an addicting and competitive game. It also helped to take the focus off of the cabbage patch kid I had growing in my stomach after dinner.
Sunday started like no other where I introduced Hill to 2 ingredient pancakes for pancake Sunday. Another addict was born! The combo of eggs and bananas sounds disgusting believe me, but once you try it you are sold. Please excuse my unfiltered picture, but pre-breakfast photos don’t exactly have my best interest when there is food to be eaten.
We romped around downtown after I drank far too much strong coffee to keep toasty. I’m pretty sure my heart was cursing me out as it pumped out of chest for the rest of the day.
It even inhibited my thinking as I auditioned for the next version of Murder She Wrote.
Now that I wrote this post in probably 3.5 minutes from all this caffeine in me, I am going to stuff my face with cabbage, turnip, and carrots. Be thankful you are not sleeping in the same bed with me tonight.
