Welcome to the great and powerful Wednesday! Unfortunately clicking your heels 3 times won’t make Friday come any faster. But I might just try for safe measures. Especially if I can score me a pair of these ruby red running sneaks and transport me to the land where James Franco is the wizard.
It was such a treat to have Monday off this week. I made sure that I twerked that Monday for all it was worth. I usually don’t have a lot of extra time during the week to play around with different recipes so I took the opportunity to whip up some extra treats.
And because I severely need to go grocery shopping. That always leads to creative and strange but good recipes. Such as my dinner of a bowl of black beans topped with a fried egg and salsa. Yeah…
I posted this pic on Instagram asking what people thought I was making. My dear friend Becky got it right on with cheese!
It was actually yogurt cheese which is made by straining plain yogurt overnight that makes a spread that is similar to the texture of cream cheese. I tried to make a pumpkin spiced one after seeing pumpkin spiced cream cheese in the blog world, but it didn’t come out as spectacular as I had hoped. Back to try cheese board before I share.
One thing I did make that came out great was some homemade english muffins. I used this recipe, and could seriously not stop eating them.
They were so much easier to make than a loaf of bread, and at around 80 calories a pop, I didn’t feel too guilty carbo loading with two of them smothered in pb and honey before my long run.
I tackled an 8 miler for the day which felt amazing. I haven’t been running as much since it has been getting dark so early so I made sure to seize the opportunity to make up for lost times.
I guess those muffins came in handy, because at the end I felt like I could have kept going. Such a good feeling! Oh and PS, Katy Perry still finds her way to come on the ipod right near the end of my run to push me through the home stretch. This is a pretty accurate picture as to what goes down every time “Roar” comes on.
I guess it’s a good thing that I didn’t go any further since as soon as I got through the door my lower back started to get pretty painful. Sharp pains as soon as I took a step. I spent the rest of the night limping around and saying “Sweet Baby Jesus!” every 5 seconds, which made me feel a lot like the old lady at heart I truly am. Just call me Gladys.
While my back felt like I gave the jolly green giant a piggyback all day, at least my legs were warm, stylin’, and pain-free. Why’s that you say?
