    You'd think in the dead of winter, buried in snow, blankets, and hot tea that I would be sick of salads. LOL.

    Does peanut butter get sick of jelly? Does mac think cheese should see other people? Salad and I made our vows a long time ago, and I take those to heart. 'Til death do us part, through winter and in health. I do.

    It's just that I up the antioxidant oomph in the months I question my Northeast existence. I'll be the first to tell you I am AWFUL about making my own salad dressings. Usually a squirt of Dijon, or a dump (official measurement term) of salsa is as far as I get.

    Some juice, oil, and vinegar though...I have no excuse not to make this more often.

    I had no idea that POM Wonderful whole-presses TWO whole pomegranates, seeds, skins, and all in each 8 ounce bottle. That's a whole lotta antioxidant powah. Added with some leafy greens and healthy fats, I laugh in the face of influenza.

    Homemade Pomegranate Cider Vinaigrette

    Ingredients

    Units Scale
    • 1 cup POM Wonderful 100% pomegranate juice
    • 2 tablespoons apple cider vinegar
    • 2 teaspoons Dijon mustard
    • 2 tablespoons olive oil
    • Β½ teaspoon salt
    • Β½ teaspoon pepper

    Instructions

    1. In a small bowl, whisk all ingredients together thoroughly.
    2. Transfer to a liquid measuring cup, and pour into reusable bottle with lid.
    3. Store in refrigerator for up to 2 weeks.
    4. Let thaw on counter for 10 minutes before using to allow oil to come up to room temperature, and liquid form.

      just made a POM vinaigrette for a salad, too, but used champagne vinegar. I love ACV in dressings usually so this sounds delicious!
