Little hey little ho my Monday folks! We all here and present? FABulous.
First off, I hope you had a fantizzy-astic Father’s day whether you are a Father yourself or spent it with your Daddy-o.
Aside from enjoying the sunshine, I got to enjoy my favorite meal from my favorite restaurant.
Veggie fajitas from Tacos Colima. So much good food. And only my father would use Father’s Day as an excuse to pay for a celebratory dinner in his honor. Happy Father’s Day Papa John, now pay for my frijoles and guac.
..So remember that time I told you that come rain or shine I’d have my wine?
Well I found a way. The sounds of thunderstorms and walking around a winery don’t exactly sound like peanut butter and jelly, so Sangria pitchers decided to save the day.
You wouldn’t believe how difficult it is to text pictures of pitchers after taking named pictures of pitchers. I challenge you to try it sometime. Just make sure you invite me. I’m now an expert in such things.
You know what is easy though? DANCIN.
Totally normal Friday night for this gal. When the music strikes you…you must answer. Only Miss Hannah will have the gloriousness of what I did to “Turn down for what” on the ride home.
Now that my weekly wine quota was fulfilled I needed to balance my life out with the other half.
FOOD. A jar of red curry paste has been taunting me every time I reach for the cinnamon, garlic, or any other spice instead of itself. I had ulterior motives for some lentils, so red curry lentils struck my fancy.
It’s hard to take a justifiable picture to equate to how they taste. A bit spicy. A parade of flavor. And wrap you up in a sari of Indian comfort food. Not much of a recipe to divulge into. Cook lentils. Add curry paste, peppers, onions, and cinnamon. Because cinnamon finds its way into every dish I make.
But this was the real reason I was hankering for plentil of lentils.
Lentil komucha? Interesting, but no. I decided to give sprouting lentils a try. You can read all about why and how with Lindsay’s post which is what inspired me to keep this jar of murky legume water on my counter for the rest of the weekend. I’ll be sure to share an updated picture when my lentils hatch into tiny wittle tadpole sprouts. Oh they’re just growing up so fast!
And one of my new favorite ways to eat kale.
Tossed with lemon juice, olive oil, apple cider vinegar, dried cranberries, onion, and sunflower seeds. How could you not want to eat something this colorfully good for you over a bag of blasé potatah chips. ( I use every excuse to use the word blasé)
peanut butter avocado could make this salad any better. Oh who am I kidding, peanut butter would totally make this better.
Whelp, that’s my weekend wrapped up in a sangria corn tortilla filled with red curry lentils. Must I make everything into a food reference? YES.
Make it a great day!
How did you celebrate Father’s day?
Corn or flour tortillas?
