It's no mystery I'm an overnight oat fan. Now that spring is (maybe?) sticking around, I naturally find myself trading up my bowls of stick-to-your-ribs cozy oats, to thick, creamy, and cool overnight oats ready and waiting in my fridge. To take the "I'm ready for summer" channeling even more, enter the Orange Creamsicle Overnight Oats.

- orange juice
- milk of choice
- vanilla extract
- vanilla Greek yogurt
- chia seeds
- rolled oats
Instructions
In a medium mixing bowl, whisk together ½ cup orange juice, ( I prefer no pulp) ½ cup milk of choice, (I've used unsweetened soy milk, or low-fat milk), 1 teaspoon vanilla extract, ½ cup vanilla Greek yogurt, and 1 teaspoon chia seeds. Stir in 1 cup of rolled oats, and mix until combined.

Transfer oats to a bowl or jar with a lid, cover, and refrigerate at least 4 hours, or preferably overnight.

- These overnight oats get thicker and sweeter the longer they sit. The best flavor/texture is achieved when they are refrigerated overnight.
- If you prefer yours sweeter, add a teaspoon or two of honey when you add the liquid ingredients.
