Meal Prep Monday: 2.21.15

Hi loves!

 

I’m currently struggling to keep my eyelids open enough to watch the all important big game.

PPUUPPPIIIIEEESSSS!!!! Gimmie them all. I’ll take them over sweaty men smacking each other’s bums any day.

Yes, this granny is ready to call it a night before the first quarter is even over. And you can thank the celebration of Becky joining me in the new age bracket club for it!

We enjoyed Portland’s finest, which of course included getting toasty at the many microbreweries around.

When do I move here again? Beach & Brews sounds like a great combo for this summer. 😉

 

Soo between traveling, fixing frozen pipes, and buying groceries so  I wouldn’t have to eat frozen broccoli and oatmeal all week..today’s originally scheduled recipe was naht happenin’.

 

But I do have plenty o’ food that I will be preppin’ for the week ahead. With another foot of snow coming our way, Monday’s looking like a great time to get cozy in the kitchen, and make it look like a war zone with some major food preppage. Let’s get down with some Meal Prep Monday y’all!

Here’s what my week of eats is looking like:

Breakfasts: Omelets, Veggie Egg Scrambles, Oatmeal (with some form of protein), Caramel Cookie Dough Smoothie, PANCAKES!

Lunches: Kale salad with: hard boiled eggs, tuna & bean salad, or lentils

Dinner: Lemon Pepper Salmon Patties, Cajun Chickpea Burgers, African Peanut Stew

Snacks: Hard Boiled Eggs, Carrots & Guacamole, Cucumbers & Hummus, Apple & PB, Protein Granola Bars, Chia Pudding

 

And now I’m hungry for all the food this week. It’s like watching an episode of Diners, Drive-Ins, and Dives. You can’t help but want all the food. ALL. THE. FOOD.

 

Excuse me while I sleep in forever and pretend it’s summer already.
