A Little Somethin’ Sunday #105

January 14, 2018 by Emily Cooper 2 Comments

Happy Sunday!

Would you believe me if I told you it was 62 degrees on Friday, and 26 degrees today? I wouldn’t either, but it’s true. The Northeast is a weird place, man. Weird place.

Good thing I’m used to weird places such as this little blog of mine. 😉 Who’s ready to high dive into a pool of the best of the web this week?!

Or at least cannonball. Pencil Dive? I digress…

I seriously love this quote so much. The more we build each other up, the more we learn, grow, and thrive together.

Music of the Moment:

“Bad Blood” – NAO

Yes, ladies other than T-Swift can have bad blood. I first heard this one last summer, but am now just coming back to getting it stuck in my head every single day. Not mad about it.

Life Lately:

Pancake House Omelette

BAE-friend and I have slowly been exploring new restaurants in Princeton, and finally made it to PJ’s Pancake House after seeing the line around the block for it every weekend. It had the typical diner-esque foods, but their version of hash browns were bomb. Kind of like mashed potatoes on steroids. And I loved the fact that they gave the butter on the side since I hate my toast drowning in soggy butter.

Bakery Window

One of our favorites has been this adorable bakery, Terra Momo. The smell alone, HEAVEN, but we go through their German Rye and Sourdough like cray. Nothing is more inviting than a warm, foggy windowed bakery in the dead of winter.

Green Smoothie Bowl

Last week..single digits. This Friday? 64. I was sweating. In shorts. With the windows open. Double U. Tee. Eff. At least I can enjoy my weekly smoothie bowl obsession without getting hyperthermia. I have been loving on Vanilla Amazing Grass, a frozen banana, and a chunka fresh ginger topped with the contents of my pantry. Del-ish.

Good Eats:

Vegan Tempeh Sloppy Joes – Fooduzzi

I’ve expressed my love for tempeh before, and making this childhood classic into a plant-friendly version is calling my tempeh-loving name.

Pistachio Coconut Oatmeal – How Sweet Eats

I have been diggin’ on some oats lately, and am drah-ooling over this masterpiece of a bowl. Two words: chocolate chips.

Shaved Brussel Sprout Salad – Lively Table

If you’ve never experienced brussel sprouts in salad form, prepare to be amazed. Those mushy baby heads of cabbage of your nightmares will be a thing of the past.

Actually Crispy Baked Chickpeas – Minimalist Baker

Seriously, get out of my brain. I was just complaining about how my roasted chickpeas NEVER come out crispy, and end up getting moldy since they’re still all hot and NOT crispy. Legume snack prayers = answered.

5 Ways to Save Money on Healthy Food – Eating Made Easy

I am all about saving cash $$$ while still eating healthy AF. Now that I have an Instant Pot, I want to try making a batch of beans a week…especially since BAE-friend could goes through about a can a day. No joke.

Pickle Juice For Runners – Hope or Hype for Muscle Cramps – Snacking on Sneakers

Just another excuse for it to be socially acceptable for me to fuel my pickle juice obsession. The research on this is actually super interesting!
