Description

These Lemon Blueberry Overnight Oats are an easy make ahead breakfast recipe full of fresh and bright flavor!


Ingredients

  • 1 cup milk of choice
  • 1/2 cup lemon Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon chia seeds
  • 1 cup rolled oats
  • 1/2 cup blueberries

Instructions

  1. In a medium mixing bowl, whisk together milk, yogurt, lemon juice, lemon zest, and chia seeds.
  2. Add oats and blueberries, and stir until combined.
  3. Transfer to a jar or bowl with a resealable lid, cover, and refrigerate overnight, or at least 4 hours.

Notes

  • Add a teaspoon or two of honey if you prefer your oats sweeter.
  • Refrigerating overnight is preferred.
