These Lemon Blueberry Overnight Oats are an easy make ahead breakfast recipe full of fresh and bright flavor!

- 1 cup milk of choice
- 1/2 cup lemon Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon chia seeds
- 1 cup rolled oats
- 1/2 cup blueberries
Instructions
- In a medium mixing bowl, whisk together milk, yogurt, lemon juice, lemon zest, and chia seeds.
- Add oats and blueberries, and stir until combined.
- Transfer to a jar or bowl with a resealable lid, cover, and refrigerate overnight, or at least 4 hours.
Notes
- Add a teaspoon or two of honey if you prefer your oats sweeter.
- Refrigerating overnight is preferred.
