So remember that time where I told you I ate a kiwi like an apple, and the entire internet lost their minds?

Yes, the ENTIRE internet. Whelp I may have found a more socially appropriate alternative.

This month’s Recipe Redux sponsored contest is with Zespri  SunGold kiwifruit, which unlike the previously infamous kiwi is clean shaven of it’s fuzzy exterior. Hence, making them a far more PC skin-eating fruit.

But for those who aren’t ready to jump the fence onto the kiwi skin eating express, I left them out of this recipe for you. Don’t worry, I ate them for you.

Key lime pie is one of those desserts that is just screaming, “Hey! Eat me only in tropical and sunny climates!”

…or at least pretend while you’re eating it. While sunglasses are optional, I highly recommend for optional enjoyment.

But sometimes it’s just little ol’ me, and don’t want an entire sweetly tart pie yelling at me about the humidity and UV ray index.

Or that my pie dish is currently MIA for the past 6 months. One of life’s biggest questions that has yet to be answered…

So I made one in a jar instead, because I have plenty of those taking up prime cupboard real estate. I do live in a hipster town after all, so that’s like an unwritten law or something.

SunGold’s are naturally a bit sweeter, and more honey-like than traditional kiwis, so I didn’t have to add much additional sweetener to this. And don’t give me that look, the avocado makes this super duper creamy, and naturally green-esque without any of that potent dyes that turn your tongue into a glow stick for 3 days.

Kiwi Lime Pie In a Jar

Ingredients

  • 1 cup plain Greek yogurt
  • 2 teaspoons vanilla
  • 1 tablespoon lime zest
  • 3 tablespoons lime juice
  • 2 1/2 tablespoons honey
  • 1/2 large avocado
  • 2 Zespri SunGold kiwis, peeled
  • 1 cup graham cracker crumbs (about 4 sheets whole graham crackers crushed) *

Instructions

  1. In a food processor, combine all ingredients except for graham cracker crumbs.
  2. Blend until smooth.
  3. In a large jar, or two smaller jars, sprinkle graham cracker crumbs to coat the bottom.
  4. Top with a third of the yogurt mixture.
  5. Repeat the process two more times.
  6. Refrigerate until ready to serve.
  7. Sprinkle tops with graham cracker crumbs just before serving.

Notes

* Use gluten-free graham crackers or crushed pecans to make gluten-free.

    OK I love the idea of SunGold being a more PC/acceptable way to eat the kiwifruit skin 🙂 And secondly love the play on key lime pie with this recipe!

    I love Kiwi’s and have been eating them every day! Even made a yummy strawberry kiwi overnight oats recently. BUT I have never eaten the skin of a kiwi! lol This looks so yummy!! I love the layers with the graham cracker crumbs!
