Key Lime Pie Ice Cream Sandwiches

  • 2 large bananas, frozen,
  • 1 avocado, mashed and frozen
  • 1/2 cup unsweetened vanilla almond milk
  • 14 cup key lime juice
  • 1 tablespoon vanilla
  • 2 teaspoons lime zest, divided
  • 9 graham cracker sheets
  • 1/2 cup white chocolate chips
  • 1/2 cup unsweetened shredded coconut


  1. In the bowl of a food processor, add banana, avocado, almond milk, lime juice, vanilla, and one teaspoon of lime zest.
  2. Blend on high until smooth.
  3. Transfer for freezer-safe bowl, and freeze for 1 hour.
  4. Break graham cracker sheets in half, and spoon ice cream mixture on half of all graham crackers.
  5. Top with remaining crackers, and tightly wrap each sandwich with plastic wrap.
  6. Freeze for at least 30 minutes, or until firm.
  7. Place chocolate chips in microwave-safe bowl, and heat 30 seconds at a time, stirring until melted.
  8. In a small bowl, combine coconut and remaining lime zest.
  9. Remove sandwiches from wrapping, and dip each sandwich in the melted chocolate.
  10. Sprinkle with shredded coconut.
  11. Serve immediately, or transfer to cooling rack, and place in freezer until chocolate is firm.
  12. Wrap each sandwich in plastic again, and freeze until serving.
  13. Let sandwich thaw for at least 10 minutes before eating.
