Key Lime Pie Energy Bites - A healthy snack recipe that tastes like key lime pie! No added sugar, flour, or oil.

It's that time again for this month's Recipe Redux crew to put their kitchen caps on for this month's theme...

Whether you pack your lunch in a bento box, a brown bag or a retro cartoon character lunch box, don’t forget the bars and bites. Small squares or round bites can pack nutrition into a sweet or savory taste. Show us your favorite way to jazz up any type of lunch box.
So while the sun is still shining and I can actually drink fluids that aren't heated up in the microwave, I'll milk it for all it's worth.
And what better way to think of warm weather and sunshine then of Key West. I had the pleasure of popping into this little gem of a place back in High School on a cruise, and it was hard to believe I was still actually in the states.

What was my favorite part you ask? Like you reallllly have to ask me that. The food of course! And what else do you eat in The Keys other than Key Lime Pie!

With just enough sweetness from the dates, and the pucker power of the lime, these are the perfect snack for when you want to pretend you are on an island far far away from back to school shopping and figuring out what bus your kid is supposed to take. Until I have that problem, I'll just enjoy these for simply being delicious.


Key Lime Pie Bites
- Yield: 9 1x
Description
Gluten & Dairy Free, Vegan, Paleo
Ingredients
- ½ cup almonds
- ½ cup macadamia nuts
- 6 dates, pitted
- 1 tsp vanilla
- 1 T lime juice
- ¼ cup finely shredded, unsweetened coconut
- 1 packet True Lime (or 1 tsp lime zest)
Instructions
- Combine almonds and macadamia nuts in a food processor.
- Process until crumbly.
- Add dates, vanilla, and lime juice.
- Process until dough forms, scraping sides of the bowl as you go.
- Transfer mixer to a bowl, and refrigerate for 30 min.
- Combine coconut and True Lime or lime zest in a shallow dish.
- Dip fingertips in a cup of water and roll dough into 9 balls, wetting fingertips each time.
- Roll each ball in coconut.
- Store in air tight container in fridge for up to 1 week.

Okay, these look so amazing. I want a whole batch, Never mind the "bites" business! Ha ha. Side note, this is Rum Point on Grand Cayman, no? My family was just there earlier this year, and it looks exactly like it. Though all the palm trees and sand can make any perfect island oasis look the same, Lol.
