What a whirlwind of a weekend it's been. After selling our house, it's been a mad rush to sell all the bulky stuff I don't want to have to cram into storage, and saying "eff it" to a lot of items I had saved for "someday" or to sell.
Instead, I'll be shacking up with Grams until I get my life figured out. Where I want to live, what I want to do, who I want to be, and then ship me and my 5' x 10' stored life to wherever that may be.
Is this ideal? No. Is this where I pictured my life to be once I became a "real" person? HECK NO.
But back to Friday's post, I am focusing my energy on what I do have, and how grateful I am for it. I have people I love, and love me. A roof over my head. A fun-tastic job. And wine...LOTS of wine.
I did however manage to get wild & crazy, aka watched the movie Wild while eating some homemade banana ice cream. Of course Reese Witherspoon was spectacular, and pretty darn close to the book if you ask me.
And of course I made some time to whip up a recipe just for you!
But since I can't ship all this great food to each and every one of you, I might as well stuff my face full of balls.
Well that came out horribly awkward. Let's go with the G-rated and PC "bites" form. Sweet and chewy snickerdoodle cookie ball......in bites.
I got to try out some of the honey-tastic flavors from Blue Diamond, which are Honey Cinnamon & Honey Dijon. I loved them both, but the Honey Cinnamon were straight up like a snickerdoodle cookie and churro combined. ...If churros were nutritious almonds, and not deep fried doughnut sticks.
Plus the jar had this great little info sticker to go with it.
Colony Collapse is a real thing my friends. Before you go spraying a can full of Raid, remember that without bees, we would have close to no food. Love thy bees!
Ok let's get on with this. I'm sure you're sick of scrolling already. 😉

Snickerdoodle Cookie Bites
- Yield: 6-7 bites 1x
Ingredients
- ½ cup honey cinnamon almonds
- ½ cup pitted dates
- ½ tsp cinnamon
- 1 tsp vanilla
- 1 tbsp water
- Coating:
- 1 tbsp coconut sugar
- 1 tsp cinnamon
Instructions
- Add all bite ingredients except water to the bowl of a food processor.
- Process until mixture forms crumbly dough ~ about 1 minute. Scrap sides of bowl as you go.
- Add in water, and process another 10 seconds.
- Form into balls.
- Combine coating mixture in a small shallow bowl.
- Roll each ball in sugar mixture to coat.
- Store in refrigerator up to 1 week, or freezer for 2 weeks.

I found shaking the little buggers in a tupperware container was a lot easier to deal with. Especially with my swap monster hands full of cinnamon sugary almond dough from forming them. Much better finger lickin' than neon cheeto hands, I can tell ya that much.
