Hello my fine looking friends!

And to my my fine mamas out there, I hope you enjoyed you’re Mother’s day yesterday!

I spent mine over my Nana’s abode with my brothers and MJ, while we tried not to get knocked out by pop flies.

And just in case you were wondering, New England decided to skip spring this year.

After seeing Kate’s Green Goddess Hummus, I’ve had greenery on the brain. And something so healthy as a green smoothie sounded like the perfect way to cool down and refuel without heating up the kitchen.

…Okay maybe ice cream would be the PERFECT hot weather dinner. I guess until they make a protein and spinach sundae…on second thought let’s just stick to a green goddess smoothie.

Green Goddess Smoothie

Ingredients

Scale
  • 1 cup water
  • 1 tsp matcha powder*
  • 1 tbsp lemon juice
  • 1 scoop pea protein, or your favorite protein powder
  • 1/2 avocado
  • 1/2 green apple, deseeded and chopped
  • 1 cup fresh baby spinach
  • 1/2 cup fresh parsley
  • 8–10 ice cubes

Instructions

  1. Combine all ingredients in blender.
  2. Blend on high for 1-2 minutes, or until smooth.
  3. Serve in tall glass.

Notes

* 1 cup of chilled green tea can be substituted for matcha powder and water.

This smoothie isn’t very sweet, so feel free to add a little more fruit to the equation if you’re not feeling so squeaky green. I left out the typical tarragon and chives of green goddess goodness, but I think Kermit would approve of the degree of green-ness this smoothie packs.

And since it’s packed with protein, it makes a refreshing post sweat session drank.

    My mom tried to get me to drink a smoothie with parsley and spinach and I was skeptical – but, I love your addition of apple and protein – yup, definitely a tasty post sweat session treat!

    I have not used pea protein powder, though I am hooked on organic vanilla whey protein powder right now. Loving the combo of green ingredients in your smoothie!!
