Gluten Free Satay Chicken Salad Sandwich

  • 2 tablespoons natural peanut butter
  • 1/2 tablespoon tamari (GF soy sauce)
  • 1/2 tablespoon lime juice
  • 1/2 tablespoon cider vinegar
  • 1 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1 (12.5 oz) can diced chicken, drained
  • 1/4 cup red grapes, halved
  • 1/2 celery stalk, chopped
  • 6 slices sprouted gluten free bread
  • lettuce


  1. In a medium bowl, combine the first six ingredients until thoroughly combined.
  2. Add diced chicken, grapes, and celery, and stir to combine.
  3. Spread salad mixture evenly on three slices of bread.
  4. Top with lettuce and remaining bread slices.
  5. Grill if desired and enjoy!
