- 1/4 cup GF oat flour (1/4 cup GF oats ground}
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1/2 tbsp sugar
- 1 tsp melted butter
- 1 1/2 tbsp buttermilk, or 1 tbsp almond milk + 1 tsp vinegar
- 1/4 cup applesauce
- 1 tbsp raisins or currants
Instructions
- Combine dry ingredients in a microwave-safe mug or bowl.
- Add melted butter, buttermilk, and applesauce.
- Stir in raisins.
- Microwave for 90 seconds, or until firm.
- Top with additional butter if desired
Notes
Veganize: Replace butter with coconut oil.
