Gluten Free Irish Soda Bread Recipe For One -- A classic treat for St. Patrick's Day that can be made right in your microwave!

Are we all feeling like the underbelly of a four leaf clover this morn'?!
I'm actually not sure if that is supposed to be a good or a bad thing, so depending on how your weekend was..adjust accordingly.
Friday was a long overdue ladies night with my gluten free goddess, Hannah. A pitcher of Sangria were mandatory.
Girl talk, drunken man interruptions, and delicious mushroom, arugula, and goat cheese pizza. What every Friday should be made of.
Saturday was cold and rainy, and all around disagreeable walking weather. Instead, a date with Jillian happened.
Level 3 is no joke. And Jillian looks like such a baby in this DVD.
After a long night of catching up with my better half blonde, Katie, a morning of sleeping in was delightful. Especially to prepare for MY FIRST RUN IN 4 MONTHS!
Yes, this winter served as a hiatus after my half marathon in November, nursing an injury, and focusing on more stress relieving exercise like yoga, walking, and some weight lifting. Now that the roads are finally visible from the mountains of snow, they started calling me.
But I missed the road, and getting back out there was like catching up with an old friend. We had so much to tell in those short 2.5 miles.
And Sunday morning pancakes always taste better after a run, when you're all too hangry, or with coffee. Oh, how I miss coffee..
Just when I thought Spring was in sight, we were graced with MORE. STINKIN. SNOW. At least it made for a good reason to hunker down and watch my girl crush J. Law.
And now, it's time for some St. Patty's Day eating!
Is it St. Patty's or St. Paddy's? Maybe it just depends on how much Jameson you've had. 😉
Before you go off drinking green beer and eating your boiled dinners, here's a quick breakfast to go with your Irish coffee.
Single Serve Irish Soda Bread
- Yield: 1 1x
Ingredients
- ¼ cup GF oat flour (¼ cup GF oats ground}
- ¼ tsp baking powder
- ⅛ tsp baking soda
- ⅛ tsp salt
- ½ tbsp sugar
- 1 tsp melted butter
- 1 ½ tbsp buttermilk, or 1 tbsp almond milk + 1 tsp vinegar
- ¼ cup applesauce
- 1 tbsp raisins or currants
Instructions
- Combine dry ingredients in a microwave-safe mug or bowl.
- Add melted butter, buttermilk, and applesauce.
- Stir in raisins.
- Microwave for 90 seconds, or until firm.
- Top with additional butter if desired
Notes
Veganize: Replace butter with coconut oil.

I never have self control with any fresh bread, so making a single serving allows me to keep my 'ish together.
And no bread should ever go without melty butter. It just can't even.

I studied abroad in Ireland and the Irish were quite vehement that St. Patty is short for Patricia while Paddy is short for Patrick. It makes more sense when you think of it in Gaelic, since "Padraig" is the Gaelic form of Patrick. So happy Paddy's Day to you!
