Fall Adventures in CT

Good Morning, Friday! Nothing makes the week go by fast like a Monday off. I still haven’t quite figured out why…

Yesterday I had a lovely dinner with my Grammy, which I hadn’t seen in far too long. We got our Frenchy on by having an aperitif aka before dinner cocktail called Suze which is a typical choice.

She of course always makes a fabulous meal with homemade hummus, veggie chili for me, and Swedish apple pie. I sure hope the french cooking gene runs in my blood!

Last night I did what any single girl would do on a Thursday night. Watch paranormal activity alone at night while eating a rice cake covered in pb & fluff. One is always a good choice. One is never. You be the judge.

To start things off, let me send a little self publicity by telling you to check out my recipe for Black Tea & Soy Marinated Tofu over at the Healthy Cow website. I know it may sound a little strange but good, but believe me it is delicious. It has a mild flavor, and you can hardly taste the tea at all. Hey if I convert MJ into liking tofu, it has to be good.

Back to my ramblings now. Last weekend I took a trip down to Connecticut to see my long lost roomies from college. While I got to see Karen and Michelle over the Summer, I hadn’t seen Hill since before Christmas!

That’s pretty much an eternity for a best friend. I arrived early Saturday morning after about a 2 hour drive. While 2 hours doesn’t sound like a long time, my pea-sized bladder and short attention span say otherwise. After getting my dose of coffee, since roadtrips and coffee go together like milk and exercise we headed out for a day of apple picking!

Actually I think we spent more time taking pictures than picking apples. Those suckers were huge, so it didn’t take long to fill up our rinky dink grocery bag and complain about how heavy it was.

It was such a gorgeous day out that we decided to head down to the beach for a stroll along the water. I was expecting the beach to be frigid and windy, but I was surprised at how warm it felt especially since I have a chronic case of foreverfrigiditis.

But not warm enough to go for a dip like one crazy person was. Then again they were attempting handstands in the water as well so they may have had one too many guzzles of salt water.

Before we all got too hangry, we headed out for lunch at Saybrook Soup & Salad. I ended up getting half of the grilled veggie sandwich and a cup of the roasted butternut squash, pumpkin, and saigon cinnamon bisque.

Boy that was a mouthful! I was a big fan of the sandwich, but the soup was just a bit too heavy for me. It sure was delicious but I could really only take a few bites without feeling like a just drank a cup of heavy cream.

That night we stayed in and made fajitas per my request, and because fajitas are always a good idea. After dinner we had a little fire outside so I could get my pyro on and check off one of my bucket list items.

The next morn called for a gorgeous hike to take in another beautiful fall day. I forget what the trail was called, but I do remember how darn steep the very beginning was.

The first 10 minutes or so was pretty much straight up, and with all of the leaves on the ground, I was anticipating plummeting to my death. But once we got to the top it was smooth sailing, and we walked a loop around following the river below. The views were gorgeous and reassured me yet again why October is my favorite month.

Later on that night we decided to go out for dinner at a little place called Pattaconk 1850, where I had ‘Clayton’s Creation’, a veggie burger topped with guac, tomato, spinach, sprouts, and feta. The only downside was that it came with celery sticks instead of sweet potato fries. I mean I know a veggie burger is healthy and all, but still what’s a burger without some fries? PS: I ate my celery sticks anyway.

An absolute gorgeous weekend with some absolutely fabulous gals. Until next time!

    I LOVE putting PB on rice cakes, but I would never think to put marshmallow fluff on there, too. Good thinking! I am definitely going to have to try that.

    Such a wonderful weekend! So happy I got to see you….and it better happen again soon. I’ll make the trip up to good ol’ NH next!
