How to Make these 4 Ingredient Peanut Butter Blossom Cookies

Start by preheating your oven to 350°F & lining a large baking sheet with parchment paper, or coating with nonstick spray. Set baking sheet aside, and mix together 1 cup of natural (the runny kind) creamy peanut butter, 1 egg, and 1 cup of sugar until combined. Stick bowl of dough into the freezer for 5 minutes, or if more time allows, the refrigerator for 10 minutes.

Add 2 tablespoons of sugar to a small bowl. Remove dough from refrigerator/freezer, and grease hands with cooking oil or spray. Roll dough into golf-size balls (makes about 15), and roll into sugar until coated on all sides.

Place each ball onto prepared baking sheet (do not flatten) & bake in preheated oven for 12-15 minutes, or until golden on bottom.
While cookies are baking, unwrap 15 Hershey Kisses, and set aside. Remove cookies from oven, and immediately press a Hershey kiss in the middle of each. Let cool on baking sheet for 5 minutes before moving to a wire cooling rack to fully cool.

Pro Tips

  • Chill the dough in the freezer for 10 minutes to firm up their texture.
  • Do not flatten the dough before baking.
  • Press Hershey kisses into the middle of each cookie immediately after removing from the oven.

Can I make these vegan?

I’ve never tried making these with an egg replacement, so cannot promise similar results with a vegan version.

How long do these keep?

Stored at room temperature in a sealed container, these cookies will keep their freshness for up to 4 days. You can store cookies in the freezer in a resealable container for up to 3 weeks.

Ingredients

  • 1 cup natural creamy peanut butter
  • 1 large egg
  • 1 cup + 2 tablespoons sugar, divided
  • 15 Hershey kisses, unwrapped

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper, or coat with cooking spray.
  2. In a large bowl, mix together peanut butter, egg, and 1 cup sugar until combined.
  3. Move dough to the freezer for 5 minutes or refrigerator for 10 minutes to firm.
  4.  Add 2 tablespoons of sugar to a small bowl.
  5. Spray hands with cooking spray or coat with oil.
  6. Roll dough into golf ball-sized balls (about 15), and roll each in sugar to coat.
  7. Place each ball on prepared baking sheet, and bake in preheated oven for 12-15 minutes, or until bottoms are golden brown.
  8. Remove from oven, and immediately place an unwrapped Hershey kiss in the middle of each cookie.
  9. Let cool on baking sheet for 5 minutes before moving to a cooling rack to cool completely.
