    Cornmeal Crusted Haddock

    Besides ranting and raving about all the True Lemon product, I thought I would share a little recipe with you that takes almost no effort to whip up. I used the Lime Garlic & Cilantro shaker to make a light but filling dinner or Cornmeal Crusted Haddock. Having all the seasoning in one shaker makes it so easy.

    Cornmeal Crusted Cilantro & Lime Haddock {GF}

    Ingredients

    Scale
    • 2 large haddock filets
    • 2-3 T yellow cornmeal
    • True Citrus Lime Garlic & Cilantro seasoning, to taste

    Instructions

    1. Preheat your oven to 375 degrees, and like a baking sheet with aluminum foil.
    2. Spray with nonstick spray and set aside.
    3. Combine cornmeal and seasoning in a bowl.
    4. Pat haddock filets dry with a paper towel.
    5. Sprinkle both sides of each filet with cornmeal mixtures to coat.
    6. Bake in preheated oven for 20-25 minutes, or until fish is fully cooked and flaky.

    I served my haddock up with some roasted broccoli that I sprinkled with some of the seasoning as well. I love the combo of citrus and seafood, and adding the cornmeal gives it a crispy texture that mimics frying without the unhealthy fats and calories.

      I saw "true lemon" in a hungry girl newsletter a long time ago, once I finally saw it I bought "true lime" because I tend to prefer lime over lemon, now I just need to start using it! That Lime, garlic, cilantro sounds the best! I would love to have some of that!

      I really like the sound of the True Orange Ginger seasoning for chicken or seafood and I have a little girl who would be all over the Black Cherry Limeade -and by the sound of it this mom would feel good saying yes to it.
