Cauliflower Crust Nacho Pizza Recipe -- Two game day classics combined into one delicious (and secretly healthy) pie!

We interrupt your regular day of eating program for something a little more epic and appetizing than my half eaten bananas and salmon patties.

A lot of people ask me how I come with some of the recipes I do. Mostly because they're unique, or the PC term for weird.
Don't worry, I take that as one of the biggest compliments someone could give me. A lot of times, the term weird is used for something out of the ordinary, which makes me one pretty unique individual if I'm called weird on a regular basis. BOSS.
Long story short, I am the most indecisive person, especially when it comes to food. So instead of deciding between two foods, I simply combine them.
Exhibit: Nacho Pizza.

What's more game day than Nachos?! And Pizza?! Why chose one when you can eat them both with one hand, and not risk having a mountain of melted cheese and sour cream land in your lap. Call me strange ( I dare you), but that's not exactly how I like to cheer on football and analyze commercials on a Sunday night.
Now I am no stranger to the world of cauliflower crusts. What I am a stranger to, is one that I actually like. All the ones I've attempted are either...
Soggy.
LOADED with cheese.
Soggy AND Loaded with cheese.
Straight up nasty.
Which is why I was super pumped and fell in love with the Cauli-Crust the first time I tried it.
It passed the test in just about every area on my cauli-crust burn list.
Crispy not soggy.
Not made with ANY cheese.
I could pick it up with my hands, no fork and knife needed.
It was already made for me.
It tasted awesome.
And lucky for me (or maybe not so when I get less pizza..) it's boyfriend-approved too!
So for the next three days, I'll be sharing all the ways I have doctored up this paleo and gluten-free friendly crust just in time for your game day grub spread.
Nacho pizza, you're up!

Cauliflower Crust Nacho Pizza
- Total Time: 15 mins
- Yield: 2-4 servings 1x
Ingredients
- 1 Caveman Crust (or favorite pizza crust/dough)
- ½ cup vegetarian refried beans
- ½ cup black beans
- ½ cup chopped tomatoes
- 1 fresh jalapeno pepper, sliced
- 1 cup shredded cheddar cheese
- 1 green onion, chopped
- sour cream, guacamole (optional)
Instructions
- Preheat oven to 475 degrees F.
- In a microwave-safe bowl, heat refried beans for 30 seconds, or until warm.
- Remove pizza crust from package, and spread evenly with refried beans.
- Top with black beans, chopped tomatoes, and jalapeno slices.
- Sprinkle with cheese, and bake directly on oven rack for 8-10 minutes, or until crispy and cheese is melted.
- Let cool and top with chopped green onion.
- Cut and serve with sour cream and guacamole for dipping if using.
- Prep Time: 5 mins
- Cook Time: 10 mins
