    Why is it that everything on a stick, mini, or made in a waffle maker tastes 10000% better? Whatever the reason, you can't deny it. Making grilled cheese in a waffle maker is always a good idea. This classic is a simple, family-friendly recipe turned up a level & like always, budget-friendly!

    What makes this Waffle Grilled Cheese delicious and healthy

    • whole wheat bread
    • Cabot sharp cheddar cheese
    • broccoli
    • garlic powder
    • black pepper

    How to make this grilled cheese

    Start by grating 2 ounces of Cabot sharp cheddar cheese and ¼ cup of broccoli using a box grater. Add to a large bowl, and stir in ¼ teaspoon of garlic powder, and ⅛ teaspoon of black pepper, or to taste.

    Heat a waffle iron over medium heat (about 350°F) and coat both top and bottom grates with non-stick cooking spray. Add 1 slice of whole wheat bread, and top with cheese mixture. Top with another slice of bread, and cook in waffle iron for 2-3 minutes, or until browned.

    • Shredding the broccoli on a box grater helps to cook it faster & more uniform in size.
    • If you want a more uniform texture, cut crusts off of bread before cooking.

    Can you make this without a waffle iron?

    You certainly can make this grilled cheese without the waffle component. (but won't be as fun! 🙂 ) Just spray a skillet with non-stick spray, heat over medium heat, and cook for 2-3 minutes on each side, or until browned and cheese is melted.

    How long does this grilled cheese keep for?

    This sandwich is best served fresh, and doesn't keep it's crispness if stored in the refrigerator. If you want to make it ahead of time, I suggest not cooking until ready to serve to achieve the best texture.

    Buy in bulk. If you use ingredients like the Cabot cheddar cheese, or whole wheat bread frequently, buy it in a larger package for a more cost-effective option.

    Ingredients

    • 2 slices whole wheat bread
    • 2 ounces Cabot sharp cheddar cheese, shredded
    • ¼ cup broccoli, shredded
    • ¼ teaspoon garlic powder
    • black pepper, to taste

    Instructions

    1. In a large bowl, combine cheese, broccoli, garlic powder, and black pepper.
    2. Heat waffle iron to medium heat, and spray with non-stick cooking spray.
    3. Add 1 slice of bread to middle of waffle iron, and top with cheese mixture.
    4. Top with with remaining slice of bread, and cook in waffle iron for 2-3 minutes, or until browned and cheese is melted.
