A Little Somethin’ Sunday #113

April 8, 2018 by Emily Cooper Leave a Comment

Happy Sunday!

Gimme dat spring weatha! The sun is shining. The birds are chirping. Which means it will probably snow 6 inches tomorrow. I’ll be wearing my lucky pajamas inside tonight just in case.

But while it’s here, let’s celebrate with ALSS numba 1-1-3!

A little something Sunday

Daily Quote:

Maya Angelou Picture Quote

from Pinterest

Damn straight. Why not have fun and look good while running the world?

Music of the Moment:

“Homemade Dynamite” – Lorde

Haim pandora radio has been my jam (literally) lately, and the new Lorde album makes a-plenty of appearances. No complaints. If this one doesn’t get stuck in your head..tell me your ways.

Life Lately:

Easy Energy Bite Container

I came home back to New Hampshire for Easter last weekend to find that my ma (MJ) made my energy bite recipe all on her own. Such a proud daughter moment. Bonus points for her grinding her own flax seeds too. #dedication

2 ingredient sweet potato pancakes on stove

One of Mr. Rob’s favorite blog recipes is my 2 ingredient sweet potato pancakes, so being the good gf and self-publicist I am, made a batch of them for him this weekend….and proudly shared on Instagram. 🙂 Chopped walnuts and extra cinnamon at the end is a MUST.

Food:

Cuban Black Beans & Rice with Roasted Peppers & Plantains – Well Plated

I’ve been hankerin’ for a plate of rice and beans, but THIS takes this dish to a place grains and legumes have enver dreamed of.

Red Wine Spaghetti with Ghee, Pine Nuts, and Basil – Feed Me Phoebe

What goes better with pasta than wine? WINE-not put it IN the pasta!?! It has been on my foodie bucket list to make wine pasta, and this only makes that more and more true.

Crispy Hash Brown Crust Pizza – Iowa Girl Eats

Raise your hand if you’ve had pizza for breakfast. Cold. After it sat out all night. In front of your kitchen sink. We’re better than that ladies and gents. Making a hash brown crust is a Gah-Enius way to make pizza for breakfast.

Good Reads:

The Skinny on Fat – The Healthy Maven

I love Davida’s take on paleo/keto, and embracing the team good fat message. I mean, one word: AVOCADO.

The Migraine-IBS Connection – Hungry Hobby

I never paired these two together before, but was SO interesting to read the research on the topic. If you suffer from migraines, this one is a must-read!

Anti-Diet Does Not Mean Anti-Health – Kale, Quinoa & Cookies

Girlll, YES. Restriction, obsession, and comparison have nothing to do with health.

Time Hop:

This time 2 years ago I …

Calling all pickle lovers! A tangy and creamy dill pickle salad dressing recipe made with pickle juice, avocado, and olive oil. #paleo #vegan #glutenfree #healthy

shared my dill pickle obsession with the world. (and found out I was far from alone. 🙂  )
